2012 Secret Squirrel Chardonnay (12x750mL), Mount Barker by Byron & Harrold, 13.0% Alc/Vol PALATE Barrel ferment characters add complexity while flavours of citrus and cashew swirl around the palate to give a long flavoursome finish. WINEMAKING The 2012 Chardonnay fruit was handpicked in pristine condition. The fruit was chilled and whole bunch pressed to allow gentle pressing. The juice was transferred directly into French oak barrels and temperature controlled to ensure a slow fermentation process with natural (wild) yeasts. This allowed for the development of complex flavours and textural weight. Post-fermentation the lees were stirred gently once a week until the balance between oak, lees characters and fruit characters was achieved. No malo-lactic fermentation was carried out so all the natural acidity was preserved. The wine was lightly fined and bottled after 9 months maturation. FOOD PAIRING Pan roasted Chicken breast with a hazelnut gremolata crust served with baby rocket. The crusted chicken gives this well structured chardonnay an extra dimension showing respect to its vibrant natural acidity. The simple and crisp flavours of the Chicken together with this complex yet delicate Chardonnay, highlights the nuttiness and subtle spice elements of this pairing. VINTAGE NOTES The 2012 vintage had a wet winter followed by dry and warm conditions for summer which continued well into autumn. Due to the perfect slow ripening pattern both red and white grape varieties showed intense colour, aroma and concentrated flavours while achieving perfect tannin ripeness.

2012 Wandering Lane Shiraz (12x750mL), Western Australia by Byron & Harold, 13.8% Alc/Vol COLOUR/ Red with a blood cherry hue. NOSE/ Complex nose, dark berries, plum, savoury spice, cigar box, leather, hints of chocolate and anise. PALATE/ Complex aromas of dark berry fruits and savoury spice with subtle leathery cigar box notes. Dense dark berry aromas carry through onto the palate with earthy ripe plum undertones, finishing with persistent savoury spice notes. The mouth feel is rich and full with fine delicate tannins. WINEMAKING/ The fruit was de-stemmed and crushed into 8 ton fermenters and pumped over with aeration twice a day. The juice was fermented at around 25 degrees Celsius, then allowed to warm up for a long post fermentation maceration. The wine was then transferred in barrel for its malo-lactic fermentation, allowing a soft integration of the grape and wood tannins. After 9 months maturation, the wine was fined with white eggs prior to bottling. FOOD PAIRING/ Perfect with robust, flavoursome foods like lamb shanks VINTAGE NOTES / The 2012 vintage had a wet winter followed by dry and warm conditions for summer which continued well into autumn. Modern white wine making techniques were used with temperature controlled critical from the vineyard through to the winery. The fruit is de-stemmed and crushed then must chilled and pressed off the skins quickly. It is allowed to settle for 48-72 hours before being racked in a clarified state to a fermentation tank. 2014 Premium Reserve Mixed Wine , Margaret River by Chapman Grove, Tasting Notes: For the lover of fine wine, this Premium mixed carton will delight anyone.. Tasting notes 2014 Vintage gave us a very wet winter but an almost perfect vintage. The dense blossom canopy provided a distraction for the birds and the consistent warm dry days enabled us to manage fruit quality and ripening. 4 bottles of Chapman Grove Reserve Cabernet Sauvignon 2014: 91 Points James Halliday Machine harvested at night, crushed and de-stemmed, pressed to French oak (25% new, the balance with staves) for 14 months. Beautiful deep rich red colour which is an indication of the depth of fruit flavour in this wine. Typical regional characters of cedar, bramble and char on the nose with a long finish on the palate, wrapped up with fine grained tannins. Screwcap Alc/Vol 13.4% drink to 2029, 4 bottles of Chapman Grove Reserve Shiraz 2014: 92 Points James Halliday Machine harvested at night , crushed and de-stemmed, pressed to French oak (25% new and the balance in staves) for 12 months. This is classic cooler climate Shiraz with beautiful perfumes on the nose and lovely fleshy fruit flavours on the palate, the tannins are soft and generous combining to give the wine a well structured finish. 2009 Oceans Estate Merlot (12 x 750ml), Margaret River by Oceans Estate Tomasi Vineyards, 14% Alc/Vol, Tasting Notes: 100% Merlot. This wine is made from Block 4 of the Tomasi vineyard. The old vines consistently give us fruit of incredible flavour and intensity. The colour is deep brick red and is in bright condition. The nose shows mulberry, red fruits, strawberry and some cedar. There are oak and skin tannins in good balance providing good structure. It has wonderful smooth velvet like texture with oak imparting a spicy note.

The fermentation was then stopped with a pre-determined level of residual sugar. Post Ferment the wine was fined with traditional additives, cold stabilized and bottled. FOOD PAIRING Beautiful with soft cheese platters and oysters! VINTAGE NOTES The 2012 vintage had a wet winter followed by dry and warm conditions for summer which continued well into autumn. 2015 Four Kings Cabernet Merlot (12 x 750ml), Manjimup by Peos Estate, 14.4% Alc/Vol, Tasting Notes: COLOUR Dark Red AROMATICS Blackberry, cloves and hints of thyme. PALATE Flavours of blackberry, chocolate and liquorice, followed by soft tannins on a persistent finish. OAK MATURATION 18 months in Old & New French oak AGEING POTENTIAL 5 years. WINE MAKING The fruit was machine picked then de-stemmed/crushed into open fermenters and inoculated. The ferments were pumped over with aeration twice a day; temperature was held around 25°C. The wine was then drained to barrel for its Malo-lactic fermentation, allowing a soft integration of the grape and oak tannins. The wine was blended,fined with egg whites and bottled after 18 months maturation. The wine is further aged in bottle before release. 5 Red Stars Outstanding winery capable of producing wines of very high quality, and did so this year. - James Halliday. RRP: $336.00

2009 Carldenn Cabernet Merlot (12 x 750ml), Perth Hills by Carldenn Homestead, 13.5% Alc/Vol, Tasting Notes: This wine is dense ruby. The lifted nose shows a tight combination of intense berry fruits, plum and oak. The palate displays the excellent combination of the two varieties, with mouth-filling , well balanced and intense flavours with a long finish.This wine is a fine example with its very clean and densely bundled nuance that will take years to unfold..
