2015 leaping Lizard Cabernet Merlot Magnum (6 x 1500 ml), Western Australia by Ferngrove Wines, 14% Alc/Vol, Tasting Notes: Appearance Crimson purple Nose Violet and florals emanate from this fragrant wine, with ripe blackberry and plum. Palate A dark plummy palate with generous mouth coating tannis. The finish is fine and long. Vinification The Cabernet Sauvignon and Merlot grapes were both harvested in the early morning when flavours were rich and ripe, and crushed to closed fermenters for maceration on skins prior to 8 day ferment. Wine was drained and underwent malo-lactic fermentation prior to controlled maturation in a range of French oak for 18 months.

2014 Chapman Grove Reserve Shiraz (12 x 750ml), Margaret River by Chapman Grove, 13.4% Alc/Vol, Tasting Notes: 2014 Vintage gave us a very wet winter but an almost perfect vintage. The dense blossom canopy provided a distraction for the birds and the consistent warm dry days enabled us to manage fruit quality and ripening. Chapman Grove Reserve Shiraz 2014: 92 Points James Halliday Machine harvested at night, crushed and de-stemmed, pressed to French oak (25% new and the balance in staves) for 12 months. This is classic cooler climate Shiraz with beautiful perfumes on the nose and lovely fleshy fruit flavours on the palate, the tannins are soft and generous combining to give the wine a well structured finish. 2016 Four Jacks Chardonnay (12 x 750ml), Manjimup by Peos Estate, 13.5% Alc/Vol, BLEND 100% Chardonnay. COLOUR Pale straw with green tints. AROMATICS Lifted nose of white stone fruit, citrus blossom, raw cashew with subtle toasty notes. PALATE Full and fleshy mouthfeel, showing intense white nectarine and citrus leaf on the palate with underlying raw cashew and subtle toasty oak, supported by a well integrated acid backbone, great length with a crisp, lingering finish. OAK MATURATION 9 months maturation in French oak. AGEING POTENTIAL 4-5 years. WINEMAKING The chardonnay grapes were picked at optimum ripeness during the coolest period of the night to help retain the vibrant primary fruit flavours. It was transported directly to the winery post-harvest, crushed and pressed to tank and allowed to cold settle. The juice was racked to barrel for fermentation. The ferment temperature was controlled, helping to retain the fresh primary fruit aromas while also developing a complex fermentation bouquet and increased palate weight and texture. Post ferment the wine was fined with traditional additives, cold stabilised and bottled.

2016 Killerby Semillon (6 x 750ml), Margaret River by Killerby Estate, 14 % Alc/Vol, Tasting Notes:Vineyard Notes: Semillon grapes were sourced from a vineyard north of the Killerby Cellar Store on Caves Road, Wilyabrup. This vineyard is low yielding and is exposed to the prevailing sea breezes keeping the vigour low to moderate. Harvesting Notes: The grapes are harvested in the early morning to retain the fresh, crisp fruit flavours and natural acidity. Winemaking Notes: Grapes were crushed ever so gently to the press. Juice was drained and settled prior to fermentation in a mix of mature French oak. WINE CHARACTERISTICS Colour: Pale green. Nose: Characteristically uplifting aromas of nettles, lemongrass and citrus with mild grassy tones. Palate: Fresh citrus flavours of lemon with spice and weighty texture balanced by mineral acid backbone and a long refreshing chalky palate.
